Clubhouse Recipe for Month of July

AVOCADO SALAD

Salad:

3 heads butter lettuce

4 pears, cut into chunks

2 cups dried cranberries

2 bags slivered almonds, toasted

Sliced strawberries

Other berries

Grilled chicken, white meat, cut into chunks

2 avocados, cut into large chunks

Dressing:

1 cup olive oil

1/8 cup grated red onion

1/2 cup red raspberry vinegar

1/2 cup sugar

1 tsp. salt

1 tsp. poppy seeds

1 tsp. Dijon mustard

Combine all ingredients in a bottle, and shake to blend.

Toss lettuce, pears, dried cranberries, and almonds in a large bowl. Just prior to serving, toss with dressing and scatter a generous amount of berries, chicken and avocado over greens.
